Parsley Pesto

Parsley Pesto

3 large handfuls of parsley
1/2 c extra virgin olive oil
1 c unsalted cashews
1 T apple cider vinegar
freshly minced garlic to taste

Cut half the stems off, place all into a food processor and blend well. Taste test and add more vinegar for added zing and/or black pepper! YUM and oh so easy! (I never knew it was this simple!)

It'll make 3x the amount you'd buy from a store and is so cheap..
Did I mention easy?!!
