This tasty mayo is a good source of B vitamins and anti-cancer flavonoids. it's also free of raw egg white so it's a healthy alternative to store brought varieties! The vinegar works as a natural preservative!
3 egg yolks
2 t apple cider vinegar
1 T lemon juice
1/4 t ground cumin
dash of yellow curry powder
8 T extra virgin olive oil
Using a food processor beat together the egg yolks, apple cider vinegar, lemon juice, ground cumin and curry powder until smooth. Then while it is still running add the oil one tablespoon at a time. Process very well after each tablespoon until thick and creamy. Taste and adjust to your liking. Add more lemon juice, add minced garlic, salt and pepper. This will keep 3-4 days if refrigerated. Makes one cup!
